Ingredients
- Tarragon Sauce:
- (refrigerate)
- 1/4 cup mayo
- 1/4 cup sweet relish
- 3 tbsp milk
- 1 tbsp mustard
- 1 tsp tarragon
- 1 tbsp parsley
- Crab Cakes:
- 1 lb crabmeat
- 1/2 cup bread crumbs
- 1/4 cup mayo
- 3 tbsp green onion
- 1 tbsp mustard
- 1 egg white
- 4 drops red pepper sauce

Preparation
Step 1
Form patties and cook 10 1/4 tsp oil.
Use 1/4 cup crumbs to form patties and roll patties in remaining crumbs and refrigerate 1 hour. Add sprinkle chives on cooked patties.
