I found this in one of the original
"Top Secret Recipes" cookbooks. I've been making them for years now and it is one our favorites. I've even made a huge "Birthday" cake version.

Ingredients

  • Cookie:
  • 1 cup margarine
  • 3/4 cup dark brown sugar
  • 1/2 cup sugar
  • 1 T molasses
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 tsp salt
  • 1 1/2 cups flour
  • 1 tsp b. soda
  • 1/8 tsp cinnamon
  • 1 1/2 cup quick oats
  • Filling:
  • 2 tsp hot water
  • 1/4 tsp salt
  • 7 oz marshmallow Fluff
  • 1/2 cup Crisco
  • 1/3 cup 10x
  • 1/2 tsp vanilla

Preparation

Step 1

Preheat 350*
Cookies:
-Cream together margarine, sugars, molasses, vanilla and eggs.
-Combine flour, salt, baking soda and cinnamon together.
-Add dry ingredients into creamed mixture,mix until combined.
-Stir in quick oats.
-Drop by spoonfuls onto parchment lined baking sheet.
-Bake 10-12 minutes.
-Cool before filling.
Filling:
-Dissolve salt in hot water,cool.
-Combine Fluff, Crisco, 10x and vanilla, mix until fluffy.
-Add salt water and mix well.
-Spread filling between two cookies.
Note-these convert nicely to GF by using brown rice flour blend and 1/8t xanthum gum...
