Ingredients

  • 1 1/4 cups water
  • 3 1/2 tbs. butter
  • 3 1/2 tbs. sugar
  • Salt
  • Vanilla
  • 2 cups flour
  • 6 eggs
  • 1/2 tsp. lemon zest
  • Oil for frying

Step 1

In a large pan combine water, butter, sugar,and pinch salt; add the vanilla and bring to a low boil. Add the flour and continue to cook, stirring constantly with a wooden spoon, until the mixture detaches from the sides of pan. Remove the pan from heat and let cool. Add eggs and zest to cooled mixture and stir to combine. Transfer batter to a pastry bag fitted with a large tip.

Add 1 inch of oil to a pan. Heat the oil to 365-370 degrees. Squeeze batter in strips in oil and fry the batter ntil godlen on both sides, about 3 minutes. Drain on paper towels and serve warm.
