Cheese Sauce

This sauce will keep in the refrigerator covered, for up to a week. Use for lasagnes, bakes, toppings and fillings. Makes about 1 PT

Ingredients
- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- 2 1/4 cups warm milk
- 1 tsp dijon mustard
- 1/2 cup shredded mature cheddar cheese
- salt and fresly ground black bell pepper

Preparation
Step 1
Melt the butter in a medium sized saucepan and stir in the flour. Cook for 30 seconds then remove from heat.
Stir in the milk, a little at a time, blending well after each addition to prevent any lumps. Return the sauce to a medium heat and stir constantly until the sauce thickens and boils.
Add the mustard and cheese and season to taste with salt and pepper. Continue to cook, stirring constantly, until the cheese has melted.
