Ingredients
- 6 pounds beef
- 1 1/2 1 ½ cup Olive oil
- 1 1/2 1 ½ quart blended tomatoes (56 ounces crushed tomatoes)
- 2 cups water (1 cup beef broth and 1 cup chicken broth)
- 1/2 ½ cup chili powder
- 2 tablespoons oregano
- 3 tablespoons ground cumin
- 3 tablespoons salt
- 1 cup chopped chili peppers (5 ground dried ancho peppers)
- 1 cup chopped onions
- 2 tablespoons chopped garlic
- 2/3 cup Masa Harina
- 2 teaspoons liquid red pepper

Step 1
Cut meat in ¾ inch chunks. Heat 1 cup of oil. Heat tomatoes, water and oregano in another pot to boil and continue to simmer.
Brown meat . Sprinkle meat with chili powder, cumin and salt and stir well.
Add tomato mixture. Simmer with pot covered 2 hours.
Chop peppers, onions, and garlic add to hot ½ cup of oil, 5 to 10 minutes. Sift part of Masa over this mixture, add more as needed.
Pour this into meat and stir. Simmer 15 minutes.
