Ingredients

  • 6 pounds beef
  • 1 1/2 1 ½ cup Olive oil
  • 1 1/2 1 ½ quart blended tomatoes (56 ounces crushed tomatoes)
  • 2 cups water (1 cup beef broth and 1 cup chicken broth)
  • 1/2 ½ cup chili powder
  • 2 tablespoons oregano
  • 3 tablespoons ground cumin
  • 3 tablespoons salt
  • 1 cup chopped chili peppers (5 ground dried ancho peppers)
  • 1 cup chopped onions
  • 2 tablespoons chopped garlic
  • 2/3 cup Masa Harina
  • 2 teaspoons liquid red pepper

Preparation

Step 1

Cut meat in ¾ inch chunks. Heat 1 cup of oil. Heat tomatoes, water and oregano in another pot to boil and continue to simmer.
Brown meat . Sprinkle meat with chili powder, cumin and salt and stir well.
Add tomato mixture. Simmer with pot covered 2 hours.
Chop peppers, onions, and garlic add to hot ½ cup of oil, 5 to 10 minutes. Sift part of Masa over this mixture, add more as needed.
Pour this into meat and stir. Simmer 15 minutes.
