Ingredients

  • 1 package dry yeast
  • 1/4 cup warm water
  • 5 cups all purpose flour
  • 1/3 cup sugar
  • 3 teaspoon baking powder
  • 2 teaspoons salt
  • 1 teaspoon baking soda
  • 1 cup shortening
  • 1-1/3 cups buttermilk

Step 1

In small bowl, but yeast and warm water to proof. In large mixing bowl stir together flour, sugar, baking powder, salt and baking soda. With a pastry cutter, cut in shortening until mixture resembles coarse crumbs, mix well. Add yeast mixture and buttermilk, stir until combined. On floured surface knead mixture about 2 minutes or until smooth, adding more flour as needed.

To make ahead the dough may be stored, covered, in the refrigerator overnight.

Roll dough to 1/2" thickness. Using 2-1/2" biscuit cutter, cut out 24 biscuits. Place biscuits on ungreased baking sheet. For roll-like texture let biscuits rise covered in warm place for 1 hour. Bake in 450 degree oven about 8 minutes until biscuits are light brown on the bottom.
