Peruvian Chicken Stew (Trader Joe's)

Ingredients
- 1 * 1 bag Trader Joe's frozen Chimichurri Rice
- 1 * 1 package Trader Joe's Just Chicken, diced
- 1 * 1 can Trader Joe's Garbanzo Beans
- 1 * 1 carton Trader Joe's Organic Chicken Broth
- 2 * 2 tbsp olive oil
- 1 * 1 onion, diced
- 1 * 1 tbsp nonfat greek yogurt per serving
- * optional: Trader Joe's Melange a Trois frozen pepper strips

Step 1
1. Saute onion and pepper strips (if desired) in olive oil until softened.
2. Pour in entire carton Organic Chicken Broth, chimichurri rice, garbanzo beans and diced chicken.
3. Simmer for fifteen minutes.
4. Serve in shallow bowls and top with spoonful of yogurt.
