Ingredients
- 3 tablespoons cornstarch
- 1/2 cup Splenda
- 1/2 cup nonfat half-and-half
- 1 large egg, slightly beaten
- 1 1/2 cups low-fat milk
- 1 teaspoon vanilla extract

Preparation
Step 1
1. In a medium saucepan, whisk together the cornstarch, sweetener, half-and-half, and beaten egg. Whisk until smooth, then whisk in the milk.
2. Place saucepan over medium heat. Cook, continually stirring, until the pudding is thick and bubbly. Cook for 1 minutes more. Remove from heat. Stir in the vanilla.
3. Pour into a medium bowl, or divide among four dessert dishes. Cover with plastic wrap. Cool and refrigerate until ready to serve.
