Ingredients
- 1 pound pork tenderloin, cut into 1-inch thick slices (see note)
- 3 tablespoons Italian-seasoned breadcrumbs
- 1 tablespoon grated Parmesan cheese
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 teaspoons vegetable oil
- 1 small onion, chopped
- 1 clove garlic, minced

Preparation
Step 1
Place pork between 2 sheets of heavy-duty plastic wrap; flatten to 1/2-inch thickness, using meat mallet or rolling pin.
Combine breadcrumbs and next 3 ingredients in shallow dish; stir well. Dredge pork in breadcrumb mixture, coating well.
Heat oil in large skillet over medium heat. Add pork, onion, and garlic; cook about 10 minutes or until pork is done, turning pork once.
Notes:
Flattening the pork medallions to the same thickness enables them to cook evenly - and more quickly!
