Ingredients
- 1 cup vegetables *see note below
- 1 small onion; diced
- 2 garlic, minced
- 2 cups vegetable stock.
- 2 tsp. corn flour
- 1 TB butter
- 1/4 cup milk
- 1/4 cup heavy cream
- 1/4 cup grated cheese
- pepper and salt to taste
- Vegetable Note: yellow and green bell peppers, carrots, peas. Also cut the vegetable to small thin pieces. You can also use cauliflower, broccoli, beans, corns .... choices are endless

Preparation
Step 1
Heat sauce pan to medium heat and add butter. Add onion and garlic and saute in the butter. After a minute add the cut vegetables.
Once they are half cooked add vegetable stock, pepper, salt and cook well.
Take the corn flour and dissolve in the milk stir until no lumps. Pour the mixture to the cooking stock. Cook until a creamy thick soup is formed. It will take about 3 - 5 minutes.
Add heavy cream and cheese and mix well.
