Ingredients

  • Sweet Pastry Crust
  • 2 lbs. apples
  • 40 grams butter, divided
  • 100 grams sugar
  • 1/2 tsp. lemon zest
  • 1/2 tsp. cinnamon
  • Icing sugar
  • 1/2 cup apricot preserves
  • 1 tbs. Cognac, rum or water, add to the preserves

Step 1

Roll pastry to fit an 8 - 9 inch tart pan, prick and chill 20 minutes. Preheat oven to 400 degrees and place a rack in the centre of the oven. Bake crust for 20 - 25 minutes, until lightly browned. When cook, spread a thin layer of apricot glaze over the bottom and sides of the tart crust. Dry 20 - 30 minutes.

Peel, core, and slice 3 apples. Melt 1 tbs. butter and stir in 1/4 cup sugr, zest, and 1/4 tsp cinnamon. Saute apples until soft, 7 - 10 minutes. Mash apples gently and cook mixture.

Peel, core, and cut remaining apple slices into 1/4 - 1/8 inch slices. Melt another 1 tbs. of butter over medium heat and stir in 1/4 cup sugr and 1/4 tsp. cinnamon. Saute the apples 5 minutes.

Spoon the applesauce mixture into the tart shell. Arrange the remaining slices in a concentric pattern, and brush top with butter. Bake the tart at 350 degrees for 25 - 30 minutes. Sprinkle the top with icing sugar and broil tart until golden, glaze with apricot jam mixture.
