  • 1 cup leftover mashed potatoes
  • 1-2 tsp whole wheat flour
  • 2-4 T olive oil
  • 1/4 cup wheat germ
  • 2 T parmesan cheese
  • 1/4 tsp salt
  • sour cream

Preparation

Step 1

Mix 1 tsp of flour into cold mashed potatoes. If still too wet, add the other. Form about 8 T size balls. Add oil to skillet and heat. Mix wheat germ and Parmesan and salt. Roll the balls in mixture. Add 4 to hot skillet, flatten gently with a spatula, and cook until browned on one side. Turn and cook on the other. Repeat. Serve with sour cream.
