Ingredients
- Spice Rub:
- 1/2 tsp salt
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp smoked spanish style paprika
- 1 tsp brown sugar
- 1 tsp granulated garlic powder
- Dressing:
- 2 Tbsp light mayo
- 1 Tb honey
- 1 tsp Dijon mustard
- 2 Tbsp sherry vinegar or white wine vinegar
- 1 Tbsp olive oil
- 1tsp whole fennel seed
- 1/2 tsp smoked spanish style paprika
- 1/2 tsp ground coriander
- Salad:
- 2 6oz salmon fillets
- 6-8 cups salad greens
- 2 carrots grated
- 4 Tbsp dried dates
- 2 Tbsp toasted pine nuts

Step 1
Combine spice rub ingredients and dressing ingredients together. Rub the salmon evenly (there will be some left over). Grill salmon 4-5 minutes on each side. Make salad and place salmon on top of greens. Drizzle with dressing.
