Ingredients

  • Spice Rub:
  • 1/2 tsp salt
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp smoked spanish style paprika
  • 1 tsp brown sugar
  • 1 tsp granulated garlic powder
  • Dressing:
  • 2 Tbsp light mayo
  • 1 Tb honey
  • 1 tsp Dijon mustard
  • 2 Tbsp sherry vinegar or white wine vinegar
  • 1 Tbsp olive oil
  • 1tsp whole fennel seed
  • 1/2 tsp smoked spanish style paprika
  • 1/2 tsp ground coriander
  • Salad:
  • 2 6oz salmon fillets
  • 6-8 cups salad greens
  • 2 carrots grated
  • 4 Tbsp dried dates
  • 2 Tbsp toasted pine nuts

Preparation

Step 1

Combine spice rub ingredients and dressing ingredients together. Rub the salmon evenly (there will be some left over). Grill salmon 4-5 minutes on each side. Make salad and place salmon on top of greens. Drizzle with dressing.
