Ingredients

  • 2 c. flour
  • 1 1/2 tsp. ground cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2/3 c. sugar (i use vanilla sugar: see my ricotta with vanilla sugar croutons recipe)
  • 6 t. butter
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 1 beaten egg
  • 3 t. sugar
  • 1 tsp cinnamon
  • used separately .. not in the mix

Preparation

Step 1

1) sift together flour, 1 1/2 tsp cinnamon, baking powder, and salt; set aside.

2) cream together 2/3 c. sugar and butter. beat in 1 egg, 1 egg yolk and vanilla. add in dry ingredients.

3) line baking sheet with parchment paper. divide dough in half and make 2 logs; approximately 2x9" the dough is sticky, i spray my hands with pam :) brush each log with beaten egg

4) bake at 325 for 30 minutes, they are starting to turn brown and harden. let them cool at least 15 minutes. cut into 1/2" slices

5) dip each slice into the separate cinnamon and sugar mixture. put slices back on baking sheet , sprinkle with a little more cinnamon and sugar and bake 15-20 minutes more. the longer they bake, the harder they will be.
