Ingredients
- 2 cups each cubed cantaloupe, watermelon, and honeydew melon
- 1/2 ½ cup sugar
- 1/4 ¼ cup water
- 2 tbs. lime juice
- 1 tbs. grated lemon rind
- 1 tsp. grated lime rind
- 1/4 ¼ cup dark rum

Step 1
In a bowl, combine the melon cubes; set aside. In a small pan combine the sugar, water, juices, and zest. Boil over high heat. Simmer, uncovered 5 minutes, remove from heat and stir in rum. Let cool slightly, pour over the melon cubes. Chill covered 2 – 24 hours stirring occasionally. One hour before serving thread the melon cubes onto 8 skewers. Place on a serving plate and drizzle with marinade. Chill until ready to serve.
