  • 1 1/2 pounds skinless, boneless chicken breast halves
  • 1/2 cup honey
  • 3 tablespoons lemon juice
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon spicy brown mustard
  • Torn mixed salad greens or hot cooked pasta (optional)

Step 1

1. Place chicken breast halves in a resealable plastic bag set in a shallow bowl. For marinade, in a small bowl, whisk together honey, lemon juice, soy sauce, and mustard. Set aside ¼ cup of the marinade. Pour remaining marinade over chicken in the bag. Seal bag; turn to coat chicken. Marinate in the refrigerator for 2 to 4 hours.

2. Preheat the oven to 400°F. Remove chicken from bag, reserving marinade. Place the chicken in a shallow baking pan.

3. Bake chicken, uncovered, about 20 minutes or until no longer pink (170°F), turning once and basting with some of the remaining marinade halfway through baking time. Discard any leftover marinade. Thinly slice chicken. If desired, serve chicken on greens or pasta. Drizzle the ¼ cup reserved marinade over chicken.
