Ingredients

  • 1 (18.5-oz.) pkg. lemon cake mix with pudding
  • 2/3 cup vegetable oil
  • 2/3 cup apricot nectar
  • 4 eggs
  • 1/3 cup poppy seeds
  • 1/2 tsp. grated lemon rind
  • 2 1/2 Tbs. lemon juice

Preparation

Step 1

Combine all ingredients, stirring until blended. Spoon into paper-lined muffin tins, filling 2/3 full.
Bake at 400 degrees for 18 to 20 minutes. Remove from pans and cool on wire racks.
(I sometimes make mini-muffins and bake them in my convection oven at 350 degrees for about 11 minutes.)
