Ingredients

  • Crust:
  • 2 cups dry walnuts
  • 2 Tablespoons olive oil
  • Filling:
  • 2 bunches of spinach
  • 6 medium sized carrots
  • Cheese:
  • 1 cup of water
  • 1 cup of lemon juice
  • 4 cloves of garlic
  • 3 teaspoons of turmeric
  • 2 teaspoons of sea salt or Himalayan salt
  • 3 cups of dry raw cashews

Step 1

Crust:

Pulse walnuts down and then drizzle in the olive oil. Press crust into a pie pan or tart pan

Filling:

wash and chop the spinach.
Pulse carrots to a fine texture or finely chop.
Mix spinach and carrots in bowl.

Cheese:

Blend all ingredients.

Combine cheese with spinach and carrot mixture. Using a spatula, put the mixture into the pie pan or tart pan.

Chill and serve.

If it seems too wet, you can dehydrate it overnight.
