Ingredients

  • 3 tbs. water
  • 1 envelope unflavoured gelatine
  • 1 ½ cups cream
  • 1 cup whole milk
  • ½ cup sugar
  • 1 vanilla bean, split lengthwise
  • 1 tsp. vanilla, if not using a vanilla bean
  • ½ tsp. almond extract

Step 1

Lightly oil 4 – 6oz. moulds, and pour water into a small bowl. Sprinkle gelatine over top.

Stand 5 minutes to soften then combine in a pan cream, milk, sugar, vanilla bean (if using).

Stir, bring to a boil over medium high heat. Remove from heat and add vanilla bean. Add gelatine and stir an additional minute, until completely dissolved, stir in:

1 tsp. vanilla, if not using a vanilla bean
½ tsp. almond extract

Pour mixture into prepared moulds and chill 3hours. Press plastic wrap directly over the surface of each mould and chill up to 3 days.
