Ingredients
- 1 lb Spinach Fettuccine
- 1/2 c chopped cilantro
- 2 tbs minced garlic
- 2 tbs minced jalapeno pepper
- 3 tbs unsalted butter
- 1/2 c chicken stock
- 2 tbs gold tequila
- 2 tbs lime juice
- 3 tbs soy sauce
- 1.25 lbs chicken breast or shrimp
- 1/4 medium red onion, thinly sliced
- 1/2 red pepper, thinly sliced
- 1/2 yellow pepper, thinly sliced
- 1/2 green pepper, thinly sliced
- 1.5 cups fat free half and half (or heavy cream)

Preparation
Step 1
1. Pour soy sauce over chicken or shrimp. Set aside for 5 minutes.
2. Add 1-2tbs of butter. Brown chicken or shrimp. Add peppers and onions. Add any leftover soy sauce. Set aside and keep warm.
3. Cook pasta a la dente.
4. Cook 1/3 cup cilantro, garlic, and jalapeno in 2 tbs of butter over medium heat for 4 to 5 min. Add Stock, tequila, and lime juice. Bring to boil and cook until reduced. Add cream.
5. Add sauce to pasta. Toss with reserved cilantro.
