• 2 C zucchini grated
• 3 eggs
• 2 C sugar
• 1 C oil
• 3 C flour
• 1/4 tsp baking powder
• 1 tsp ginger
• 1 tsp baking soda
• 1/4 salt
• 1 tsp cinnamon
• 1 C chopped nuts

mix sugar ,eggs, oil -
blend in zucchini by hand and dry items by hand

place in 2 loaf pans


bake for one hour
