Ingredients

  • 1 1/2 # boneless, skinless chicken breast, finely chopped
  • 1/4 C lime jkiice, divided
  • 1 garlic cloves, minced
  • 1 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1 10-oz. can of efried beans
  • 1 1/2 C sour cream, divided
  • 1 package (1 1/4 oz) dry taco seasoning mix, divided
  • 1 T salsa, red or green
  • 1 cubed avocado
  • 1 T olive oil
  • 1 C shredded cheddar cheese
  • 1 small onion finely chopped
  • 2 tomatoes, finely chopped
  • 1 can sliced black olives, drained and chopped
  • 1 bag tortilla chips

Step 1

Place chicken in small bowl. Sprinkle with 3 T lime juice, garlic, salt and pepper. Mix well and set aside. Combine the beans with 1/2 C sour cream, 2 1/2 T taco seasoning and salsa in medium bowl. Spread the beam mixture in the bottom of a 2-quart baking dish or casserole dish.

Cut up the avocado, and add the remaining 1 T lime juice, and sprinkle avocado over the bean mixture.

Heat oil in large fryuing pan over high heat and add the chicken in a single layer. Cook until the chicken is brown on the bottem, then turn to brown on the other side, and continue to cook until it is cooked through.

Continue to layer the ingredients: chicken, sour cream mixture, cheese, onion and tomatoes. Top with the olives.

Refrigerate until it is completely cooled.

Serve with tortilla chips.
