Ingredients
- 2 cups frozen corn, thawed
- 1 (15 oz) can black beans, drained and rinsed
- 2 cups reduced fat shredded Mexican cheese blend (I used Weight Watchers brand)
- 1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
- 4 scallions (green onions), chopped
- 1 (4 oz) can of green chiles, drained
- 1 t ground cumin
- 1/2 t chili powder
- 1 t salt
- 1/2 t black pepper
- 1/4 t cayenne pepper
- 24 egg roll wrappers (1 package)
