Double Chocolate M&M Cookie Bars

A delicious chocolate cookie dough with chocolate chips and m&m's mixed in. Geoff and Abby wanted to call them brownies, but I think the texture is more like a cookie than a brownie, so let's call them cookie bars. :)

Ingredients

  • 12 tablespoons butter, melted
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 egg + 1 egg yolk
  • 1 teaspoon vanilla
  • 1 2/3 cups flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup m&m's (I used plain, but any kind would be yummy)

Preparation

Step 1

Preheat oven to 325. Prepare a 9 x 9 pan by lining with foil and spraying with cooking spray. In a large bowl or the bowl of a stand mixer, combine butter and sugars. Add egg, egg yolk, and vanilla, and mix until combined. Add flour, cocoa powder, baking soda, and salt, and mix until just combined. Fold in chocolate chips and m&m's, reserving a little of each to sprinkle on top. Spread batter evenly in prepared pan, and sprinkle remaining m&m's and chocolate chips on top. Bake 30-25 minutes, or until a toothpick inserted in the dough comes out mostly clean. Let cool before slicing
