  • 1 C long grain rice
  • 6 eggs
  • 1/4 t salt
  • 1 T soy sauce
  • 1 8 oz package bacon, cooked and crumbled
  • 2 T chopped green onions

Step 1

About 2 1/2 hours before serving prepare rice and chill. Beat eggs and salt slightly. Heat 3 T of salad oil very hot. Pour in egg mixture, cook with spoon stirring quickly and constantly until eggs are size of peas and leave at side of pan. Reduce heat to low. In same skillet, gently stir rice and 2 T salad oil until rice is well coated. Add bacon and soy sauce; gently stir and mix all ingredients. Heat through. Sprinkle with green onions.
