Ingredients
- 2 tablespoons vegetable oil
- 1 pound ground turkey
- 1 1/2 cups chopped onion
- 1 cup chopped green bell pepper
- 2 (16 ounce each) cans black-eyed peas, drained
- 1 (14-1/2 ounce) can whole tomatoes, undrained and coarsely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Preparation
Step 1
In large skillet, heat oil over medium heat; add ground turkey, onion, and green bell pepper and cook until turkey is browned, stirring to crumble meat.
Drain off liquid. Add remaining ingredients; bring to boil, reduce heat and simmer 30 minutes, stirring often.
Notes:
Go ahead and add your own seasoning favorites. Anything from basil to oregano, chili powder, hot pepper sauce, or Cajun seasoning will work!
