Ingredients

  • 1/2 cup ham, slivered
  • 1/2 cup water chestnuts, slivered
  • 1/2 cup carrots, slivered
  • 1 cup bean sprouts
  • 4 eggs, slightly beaten
  • 1/2 teaspoon soy sauce
  • 1 stalk celery, cut diagonally into thin pieces
  • 2 stalks green onion, cut into 1/2 inch pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar

Preparation

Step 1

Stir fry ham and vegetables in a small amount of hot oil until tender but crisp. Remove from heat; cool. Season eggs with salt, soy sauce, and sugar. Mix in the vegetables and ham. Heat a little oil in pan. Drop 3 tablespoons of egg mixture in at a time. Fry until brown on both sides over low heat.

*_Variation_*: Chopped shrimp may be used in place of ham.
