Ingredients
- 2.5 lbs. of good quality parsnips
- 2 T. butter
- 1 c. beef stock
- Salt
- Pepper
- Nutmeg

Preparation
Step 1
1. Preheat oven to 300F.
2. Peel and quarter the parsnips and boil for 15 minutes but do not let them cook completely (parboil).
3. Place in a large dish and add the beef stock, salt, pepper, and nutmeg as required. Spread with butter.
4. Cook for 30 minutes.
