Ingredients
- ½ cup olive oil
- ½ cup extra virgin olive oil
- 2 Tbsp finely chopped fresh mint
- 2 Tbsp finely chopped fresh parsley
- 6 Tbsp fresh lemon juice
- 1 Tbsp Dijon mustard
- 1 tsp sugar
- ½ tsp salt
- ½ tsp pepper

Step 1
Whisk together all ingredients. Store in an airtight container in the refrigerator up to 2 weeks. Let chilled vinaigrette come to room temperature before serving. Drizzle this over salad greens topped with fish or chicken, green peas, and shredded carrots.
