Ingredients

  • 1 cup butter
  • 3 cups all-purpose flour
  • 1 1/4 cups sugar plus extra for sprinkling
  • 1/2 tsp baking soda
  • 1 egg
  • 1/2 tsp cream of tartar
  • 1 to 2 tsp lemon extract

Preparation

Step 1

1. Preheat oven to 325 deg
2. Cream butter and sugar until fluffy.
3. Add egg and lemon extract. Beat well.
4. Add flour, soda and cream of tartar. Mix well.
5. Chill dough. Roll into balls the size of a walnut. Flatten with a fork. Sprinkle with sugar and bake 15 to 20 minutes.

Yield: 8 dozen
