Ingredients
- Red Wine Vinaigrette:
- 1/2 c. vegetable oil
- 1/2 c. sugar
- 3 T. red wine vinegar
- 1/4 t. salt
- 1/4 t. pepper
- Salad:
- 1 (20 oz.) can mandarin oranges, drained
- 1 pkg. Ramen noodles, broken and toasted, (discard flavor pkt.)
- 10 oz. spring salad mix
- 4 oz. feta cheese, crumbled
- 1 c. pecan halves, toasted
- 1/2 c. dried cranberries

Step 1
FOR THE VINAIGRETTE: combine the oil, sugar, vinegar,
salt and pepper in a jar with a tight-fitting lid and seal tightly. Shake to blend. Chill in the freezer 10 minuter or in the refrigerator for 30 minutes.
FOR THE SALAD: toss the oranges, noodles, salad mix, cheese, pecans, and cranberries in a salad bowl. Add the vinaigrette and mix well. Serve immediately.
