Cake-Buttermilk Chocolate Cake

Ingredients
- FROSTING:
- 1 1/2 cups unbleached flour
- 1/2 cup oat flour
- 1 1/2 cups sugar
- 1/2 cup plus 1 TB cocoa powder
- 2 tsp baking soda
- 1 1/2 cups nonfat buttermilk
- 1/4 cup water
- 2 tsp vanilla extract
- 1 TB cocoa powder
- 1 cup nonfat vanilla yogurt
- 1 cup light whipped topping

Step 1
Combine the flours, sugar, cocoa and baking soda and stir to mix well. Stir in the buttermilk, water, and vanilla extract.
Coat a 9x13 inch pan with nonstick cooking spray. Spread the batter evenly in the pan, and bake at 350 F for 30 - 35 minutes, or until a wooden toothpick inserted in the center of the cake comes out clean. Cool the cake to room temperature.
To make the frosting, stir the cocoa into the yogurt. Then gently fold the yogurt into the whipped topping. Spread the frosting evenly over the cake, cut into squares and serve immediately or refrigerate.
