Ingredients

  • CAKE
  • 1 yellow cake mix
  • 4 eggs
  • 2 - 3.4 oz vanilla pudding (instant)
  • 1 1/3 cups water
  • 1/2 cup oil
  • 1 cup chopped walnuts
  • FROSTING
  • 1 - 8oz pkg cream cheese (room temperature)
  • 1 tsp vanilla
  • 2 tsp milk
  • 3 1/2 cups powdered sugar
  • 2 cups shredded coconut

Preparation

Step 1

Toast coconut

Cake - mix cake ingredients at medium speed - 4 minutes
Fold in 1 1/2 cups coconut
Place in a buttered and floured pan
Bake for 350 degrees

Frosting - mix cream cheese, vanilla, and milk
Gradually add powdered sugar

Place on cake

1/2 cup coconut on top of frosted cake
