Ingredients

  • 1 1/3 cups all purpose flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 2 tsp salt
  • 1 beaten egg
  • 1 cup milk
  • 1/4 cup oil
  • 2 tsp finely shredded lemon peel
  • 1 tbsp lemon juice
  • 1/2 cup cranberries
  • 2 tbsp lemon juice
  • 1 tbsp sugar

Preparation

Step 1

1. Stir together flour, sugar, baking powder and salt.
2. Mix together egg, milk, oil and lemon juice. Add to the dry mixture. Stir until just moistened (better should be lumpy). Stir in cranberries.
3. Bake at 350°F for 50-55 mins.
4. Stir together 2 tbsp lemon juice and 1 tbsp sugar. Brush over the top of the loaf while loaf is still in the pan. Cool for 10 mins before removing from pan.
