Ingredients
- 1 1/2 lbs potatoes, unpeeled & grated
- 2 tsp olive oil
- 3/4 tsp fresh rosemary, finely chopped
- 1/4 tsp black pepper
- 3 TBLS parmesan, grated

Step 1
In a large bowl; add potatoes. Add oil, rosemary and pepper. Toss well to coat.
Divide potato mixture into eight portions and spread into four large rounds. Place four rounds on one lightly greased baking sheet and four rounds on another lightly greased baking sheet. Bake in preheated 475 F (240 C) oven for 20 minutes.
Carefully, turn hash browns over and sprinkle with cheese. Cook under broiler for 3 minutes or until tops are golden brown and potatoes are cooked through.
