Onion Fritters

Onion fritters can be made very easily and quickly at home, and are enjoyed with green chutney or chili sauce.

Ingredients
- 4 large onions
- 4 cloves garlic
- 3/4 cup chick pea flour (besan)
- 1/2 cup flour
- 1 egg
- 1 1/2 tsp bicarbonate of soda
- 1 tsp chili powder
- salt to taste
- vegetable oil for shallow frying

Preparation
Step 1
Peel the onions and cut in half. Slice very thinly. Finely chop the garlic.
Mix the flours with the remaining ingredients and enough water to make a smooth creamy batter.
Add onions and garlic and mix well.
Heat oil, about 2 cm deep, in a wide flat pan.
Add tablespoonfuls of the batter and press into patties. Fry on both sides until golden brown and cooked through.
Remove to a rack covered with paper towels to drain excess oil.
Serve hot with chili sauce or green coriander chutney.
RECIPE SECRET: If you do not want to use egg then you can add a little corn flour to make the fritters more crispy.
