Southwest White Chicken Chili

Yum! This was very good, and very easy! i'll be doubling the recipe next time so that I can have leftovers. Thanks for a keeper!

Ingredients

  • 1/2 cup oil
  • 1/2 cup flour
  • 3 to 4 cans chicken broth or smoked chicken juice
  • 2 cups great northern white beans
  • 2 cups chicken, chopped
  • 4 to 6 scallions
  • 3 to 4 cans green chiles, chopped (preferably hot)
  • 1/2 cup Monterey Jack, grated
  • 1/2 cup sour cream
  • 2 teaspoons garlic powder
  • 1 tablespoon cumin
  • 2 teaspoons chili powder
  • 2 teaspoons mesquite seasoning
  • Fresh cilantro, as desired

Preparation

Step 1

Make a roux

Add broth and simmer until it thickens.

Add spices and blend in sour cream with grated cheese.

Add remaining ingredients.

Simmer for 1 hour and top with fresh cilantro. Enjoy!
