Overnight Eggnog Streusel Coffee Cake

- STREUSEL:
- 1/3 cup granulated sugar
- 1 tablespoon all-purpose flour
- 1 tablespoon butter or margarine, softened
- 1/2 teaspoon ground nutmeg

- COFFEE CAKE:
- 1 cup granulated sugar
- 1/2 cup butter or margarine, softened
- 1 cup eggnog
- 1 container (8 ounces) sour cream
- 1 teaspoon rum extract
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt

- EGGNOG GLAZE:
- 1/2 cup powdered sugar
- 1-2 tablespoons eggnog

Preparation
Step 1
Grease bottom only of rectangular pan, 13x9x2 inches, with shortening.
In small bowl, mix all Streusel Topping ingredients with fork until crumbly; set aside.
In large bowl, beat 1 cup granulated sugar and 1/2 cup butter with electric mixer on medium speed, or mix with spoon. Beat in 1 cup eggnog, the sour cream, rum extract and eggs until blended. Stir in 2 1/2 cups flour, the baking powder, baking soda and salt. Spread in pan. Sprinkle Streusel Topping over batter. Cover and refrigerate at least 8 hours.
Heat oven to 350°F. Uncover pan; bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes.
In small bowl, mix all Eggnog Glaze ingredients until smooth and thin enough to drizzle. Drizzle over coffee cake. For servings, cut into 5 rows by 3 rows.
Expert Tips:
Can't wait until the next morning to bake this yummy cake? You don't have to. Just reduce bake time to 30 to 35 minutes if baking immediately.

This is amazing cake! After buying too many cartons of eggnog during the holiday season I needed a recipe that used a lot of eggnog, this was it! I've made it three times and each time it has come out moist, flavorful, and absolutely delicious! I gave some to friends who raved about it and insisted that I give them the recipe! I think I'll have to make my own eggnog throughout the year, just so I can make this cake! This recipe is a keeper!

Absolutely incredible! I lightened it up a bit by using part splenda and my own eggnogg (Hungry Girl has an awesome low cal recipe) and it's still decadent enough that my husband and I eat it for dessert. Sooooooooooooooooo good!
This cake is so moist and delicious it's a keeper for sure.I use 1/2 tsp of rum extract instead of 1 tsp then. And add 1 tsp of vanilla extract and 1/4 tsp of nutmeg . For the glaze did not have any left over of egg nogg so i use heavy cream instead , my husband love the cake . and give some to my 85 year old neigbor. Thank you betty crocker im always searching for recipes.
I made this coffee cake for my familes Christmas morning breakfast, and it was an absolute hit! I used the Pennsylvania Dutch Eggnog which has rum already mixed in it, and omitted the rum extract. The coffee cake was so moist and had a wonderful flavor, not overpowered by the flavor of eggnog. Even my niece who dislikes eggnog requested the recipe so she could make it for her friends.
This is an amazing coffee cake! It came out so moist and full of flavor. I did use some whole wheat flour for 1/2 of the flour and it still came out great. My family also prefers more of a strudel topping, so I did that. Will be making again!!
This is an awsome coffee cake. My family likes more glaze on top so I increased the powdered sugar and added more egg nog and a little cinnamon. Make this and you won't be disappointed.
I have been making this coffee cake for about four years now, it is one that my family looks forward to every year! As soon as we start seeing eggnog in the stores, you can bet we'll be making coffee cake! I have made it for home, church, school (my husband is a teacher), and for a gift to friends. Go ahead and print multiple copies of the recipe because anyone that eats it will want a copy. While it has the flavor of eggnog, it isnt overwhelming at all and people who dont like eggnog will still enjoy the cake. It is moist, has a lighter texture than most coffee cakes, and has just enough to crumble and icing on the top. It is in our 'Family Faves' cookbook!

This cake is very moist and has a sweet flavor, but wasn't one of my favorites. I think I would like to add apple to it next time. The best part for me was how nice it was to make ahead, then pop in the oven the next morning. I didn't really taste the egg nog, so that shouldn't be a problem for people that don't like egg nog.
The picture that is displayed was very misleading to me. My cake did not come out looking nothing like that. i followed the directions and used the ingredients accordingly. The cake turned out brown. The cake in picture looks like a box cake. Don't get me wrong it taste good.

Feeling rushed and overwhelmed, I tossed this recipe at my husband and begged him to 'throw' it together for our church's Christmas brunch. Not only did he do a great job of making this coffee cake (translates: easy to do), he even enjoyed it. And to top it off, everyone raved about it which made him feel so very accomplished as a amateur chef. It was moist and tasty without being overly sweet. Lots of yummy eggnog flavor without being overwhelming. We're going to make it again on Christmas morning!

I made this both overnight and the morning of, and it was a hit both times at work. Excellent recipe, there was just enough eggnog to give it the flavor but it didn''t overpower the cake itself. Very rich and moist. I plan on making this again.
