Found in Grandma Eva's recipe box. Must be Grandma Eva's because Grape Nuts cereal is part of the recipe, and she loved those.

Ingredients

  • 2 cups sugar
  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups grated zucchini, packed down*
  • 3 tsp. vanilla
  • 1 tsp. salt
  • 3 cups flour
  • 1 tsp. soda
  • 2 tbsp. grated orange rind
  • 1/4 tsp. baking powder
  • 3 tsp. cinnamon
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup grapenuts
  • Do not peel zucchini. The green peeling is very pretty in the bread. However, I have used some very large zucchini in my recipes and I have peeled that if the skin is tough.

Preparation

Step 1

Preheat oven to 325 degrees.

Beat together sugar, eggs and oil. Combine the other ingredients with the egg and sugar mixture.

Pour into two loaf pans. Bake for 1 hour or longer. Grandma's recipe card says, "I bake my loaves 1 hour and 10 minutes." Try it with a toothpick.
