Bisquick Apple -Topped Coffee Cake

Ingredients
- DTREUSEL TOPPING:
- 2/3 cup Original Bisquick baking mix
- 2/3 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 cup cold butter or margarine
- COFFEE CAKE:
- 2 cups Original Bisquick baking mix
- 2/3 cup milk or water
- 3 tablespoons granulated sugar
- 1 egg
- 2 medium cooking apples, peeled and thinly sliced (2 cups)
- 2 tablespoons chopped nuts
- GLAZE:
- 1/2 cup powdered sugar
- 2-3 teaspoons milk

Step 1
Heat oven to 400°F. Spray 9-inch square pan with cooking spray. In smal bowl, mix 2/3 cup Bisquick mix, brown sugar, cinnamon and nutmeg. Cut in butter, using pastry blender (or pulling 2 knives through ingredients in opposite directions), until crumbly; set aside.
In medium bowl, stir together 2 cups Bisquick mix, 2/3 cup milk, the granulated sugar and egg; beat vigorously 30 seconds with spoon. Spread half of batter in pan. Arrange apple slices on batter; sprinkle with half of streusel topping. Spread with remaining batter; sprinkle with remaining topping. Sprinkle with nuts.
Bake about 25 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 20 minutes. In small bowl, stir glaze ingredients until smooth enough to drizzle. Drizzle glaze over warm coffee cake.
Some common cooking apples are Cortland, Northern Spy, Rome Beauty, Winesap, Golden Delicious and Granny Smith.

Very good and will definetly make again. Took the suggestion of whisking the milk and egg along with a Tsp. of vanilla extract. Sliced apples (only 2) very thin and baked in a 8x8 plan. Cake raised with no problem and batter wasn't sticky. Will only cut down the brown sugar topping next time was a little too much sugar for us.
Yummy and easy to make. I made two one after another. With the first one I also experienced sticky batter. With the second one I mixed the egg in with the milk before I added it to the mixture which made a huge difference. Batter wasn't sticky and there was enough batter to split it. Enjoy!

Great recipe! Followed the recipe except used Heart Smart Bisquik and added vanilla to the batter. It goes in the keeper file!
I wish to address the comment about the spreadability of the batter. I did find it sticky but used cooking spray on a spatula and that made it easier to spread. I did not think it was enough batter either, but when it came out it had risen greatly. I will definitely make this again!
Prep time is way off. Took much longer. Also made a little more batter as I read other reviews about skimmpy batter. Also added a little oil to the batter. Turned out okay and Hubby liked it ( which is most important). Next time, however, I will chop the apples instead of slicing. Also had to bake it for 30 minutes.
Followed recipe EXACTLY and found that a 9-inch pan is way too wide for the amount of batter. I'll use a 8-inch next time. I also felt the cake part was in need of some flavor and will add a tiny bit of vanilla extract. Since no type of apple was given, I used my usual "Granny Smith" cooking apples and it turned out way too tart and bitter. Maybe I'm trying to compensate for the small quantity of sugar with sweeter apples and vanilla. Perhaps more than 3 Tbl. of sugar would solve the taste problem.
The batter was extremely sticky and definitely not enough for the top layer. Impossible to spread it, especially on the top layer. It's definitely not pourable. Didn't anyone else have this problem? What can be done to make it less sticky and pourable? I only gave it 1 spoon because it is still in the oven and I haven't tasted it yet. I just know I struggled with spreading such a small quantity. It also appears to be way too much streusel topping.
This was easy to make and very good.I omitted nutmeg and added 1/4 tsp allsice,I also grated the apples w/ the larger grating side and added apple to the top also,on top of batter,then I sprinkled topping.
Love it, Love it, Love it!! One of the best apple desserts I've had. The family loves it and so do the neigbors! So easy to make. Although, I always use more apples than it calls for.
Yum, this turned out pretty good! I do agree with the person that said it didnt seem like enough batter, I had to spread out the batter the 2nd time! I didn't use that many apple slices as I am not that much of a fan of fruit in my cakes but its fall and I had apples around so I thought I would half of an apple. To the person that is asking about what kind of apples to use, look on the hints under the healthy eating, there is a list, I used Red Delicious but I think you can use what you like? Granny Smith is on the list too...
This recipe did not have enough batter for a 9" pan. I used an 8" square pan and still did not have enough batter. If I were to make it again I would double the batter and use apple pie filling in place of the apples call for in the recipe. It was very tasty, though.
There was definitely not enough batter to cover both the bottom and top of my 9' ROUND J pan. I had to make another batch of batter to just cover the top. Thus, I had to increase baking time to 45 mins. I agree with the review that said this is not "easy". My prep time was at least 30 mins. But now that I have tasted it. Yeah, it was worth it.
I followed the recipe to the T (except that I used a 7 inch square pan instead of 9 inch). It turned out perfect. The batter was plenty and spreadable for a 7 inch pan. I put glaze on this time but will probably leave it off next time as the cake is plenty sweet. Everyone loves it! I take it to brunches.
This is a huge hit in my house! Every year after apple picking this is the first thing I make!
I did not find this to be easy to make. GOOD, YES but not easy. The prep time took me 45 min, not 15. The Streusel topping was the comsistancy of peanut butter. Very sticky and hard to "sprinkle" as directed. Also the cake batter was thick and hard to pour. However the taste is out of this world. I give it 3 spoons for "easy to make" and 5 spoons for "taste".
I just made this last week and it was delicious! I left out the nuts (allergies), used canned peaches instead of apples (forgot I had used the last of them, oops!), and added some extra glaze. I'll definitely make this again. There are so many different flavors you can use to make this recipe your own :)
This cake is wonderful and not too sweet. My family really enjoyed it. I did make some changes: I used heartsmart baking mix, and I diced the apples instead of slicing them. Then I add a little lemon juice to the apples to make them tart. It seems not enough batter for double layers, so I made another batter(half of the recipe)to make nice two layers coffee cake. I also used coconut oil instead of the butter because of the health benefit of the coconut oil. It came out great!! It took 45 min to bake and I had to put a piece of foil on top of the cake to prevent from over browning. Thank you very much for the nice recipe!
Easy to make - will make again - still moist after 2 days.
This was easy to make. I didn't put the glaze on because I thought that it would make the coffee cake too sweet. I didn't pack in the brown sugar either. I also omitted the nuts. It turned out great and not so sweet.
This was ideal for feeding 3 hungry boys (surprise!) when my supplies were limited and I had less than 2 cups of mix (pancakes would have fed 1...maybe). I needed to double the batch but had 1 apple, so I "filled in" using a pear and some canned peaches. One boy is allergic to nuts so I put some raisins in instead. It turned out great!
I made this for work and my co-workers loved it. They ALL went back for seconds. The top got pretty dark since it's baked at 400 degrees but it didn't get hard or crunchy. Definitely a recipe I am going to make again and again!
I have been making this recipe for years and LOST my recipe (handwritten from family) over the years. This is great when you substitute different fruit like peaches, pears, or berries but with the berries you have to thicken them a little so it doesn't get too runny. Otherwise, my family has loved this recipe for over 35 yrs.
This was okay, I thought the topping was a little too sweet and got a little too dark.
I made this first for a friend and then for church. I did not put in nuts (allergies) and skipped the glaze. It was a HUGE hit! Everyone loved it! I even doubled the recipe and put it in a larger pan, cooking it for an extra 5-10 mins.
Just made this and my husband and oldest son REALLY love it! It's quick and easy to make! I put it in an 8x8 pan since I didn't have a 9in. I also used 1 1/2 T of splenda for baking instead of the sugar. I will have to make this again for sure!
