Ingredients
- 2 large eggs
- 2/3 cup Splenda
- 1 1/2 cups mashed banana (about 3 medium ripe bananas)
- 1/4 cup vegetable oil
- 1 tablespoon molasses
- 1 1/2 teaspoons vanilla extract
- 1 cup white whole wheat flour
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 cup chopped walnuts (optional)

Preparation
Step 1
1. Preheat the oven to 350 degrees. Lightly coat a nonstick 9x5 inch loaf pan with cooking spray.
2. In a large bowl, beat the eggs and sweetener together with an electric mixer until the eggs are pale yellow and have tripled in volume. Reduce the speed to low and add the mashed bananas, oil, molasses, and vanilla extract.
3. In a large bowl, combine the flours, baking soda, and nuts, if desired. Stir. Make a well in the center and add the banana mixture. sing a large spoon or spatula, stir just until the dry ingredients are moistened.
4. Scrape batter into the prepared load pan and smooth top.
5. Bake for 45 to 50 minutes or until a toothpick inserted into the middle of the loaf comes out clean. Cool on a wire rack for 10 to 15 minutes before removing from pan
