TURKEY CUTLETS WITH MUSHROOMS

Ingredients
- 6 to 8 turkey cutlets
- 1/4 cup four
- 1 tsp paprika
- 1 tsp salt
- 1/4 tsp pepper
- 2 tbsp olive oil
- 3 tbsp butter
- 6 to 8 ounces sliced mushrooms
- 4 green onions, chopped
- 2 tbsp dry sherry
- 1/2 tsp dried tarragon
- 1/2 tsp dried leaf thyme
- 1/2 tsp dried rosemary
- 2 tsp fresh chopped parsley
- 1/2 cup heavy cream
- 1 tbsp chopped fresh parsley for garnish

Step 1
1. Combine flour, paprika, 1 tsp salt and 1/4 tsp pepper.
2. Dredge turkey cutlets in flour mixture.
3. Put olive oil and 1/2 butter in a large skillet over medium heat.
4. Cook the turkey in batches to brown, about 2 minutes each side.
5. Remove turkey cutlets and keep warm.
6. Add remaining butter to the pan and add the mushrooms and green onions.
7. Cook, stirring, for about 2 minutes.
8 Add sherry, herbs and heavy cream and cook down until reduced to a lightly thicken sauce.
9 Return turkey slices to the pan.
10. Add salt and pepper to taste.
11. Cook a minute or two to heat through, spooning the sauce over the cutlets.
12. Sprinkle frsh parsley over cutlets and serve.
