  • 2 cups whole milk
  • 1/2 tsp. vanilla
  • 6 egg yolks
  • 6 tbs. flour
  • 3/4 cup sugar
  • Salt

Step 1

Put all but 1/2 cup of the milk into a pot over low heat. Add the vanilla.

Just before the milk boils remove the pot from heat and let sit for 10 minutes.

Preheat oven to 325 degrees.

Lightly whisk the yolks in a mixing bowl; sift if the flour, sugar and the remaining 1/2 cup milk, make sure to beat out any lumps.

Pour the warm milk into the egg mixture and return the cream to the pot. Continue to cook over low heat, whisking until it barely reaches a slow boil. Cook an additional 2 minutes, stirring. The cream should be the consistency of yogurt. Transfer the cream to a bowl and let it cool.

Spoon cooled cream into the crust and cover with lattice strips, bake for 50 minutes until golden.
