Poached Chicken sandwiches with lime mayo

Ingredients
- Lime mayo:
- 1/2 bunch parsley
- 1 T whole black peppercorns
- 2 spring onions, roughly chopped
- 3 x 175 chicken breast fillets
- 1 small iceberg, lettuce, shredded
- 2 cucumbers, thinly sliced into ribbons
- 1 cup coriander leaves
- 1 c whole egg mayonnaise
- finely grated zest of 1 lime, plus 2T juice

Preparation
Step 1
Place the parsley, peppercorns, spring onion, and 1T salt in a large saucepan filled with cold water and bring to the boil. Add the chicken breasts, turn off the heat and cover with a lid. Stand for 1 hour to poach until cooked through. Remove the chicken form poaching liqid, then shred using 2 forks.
Meanwhile, for the lime mayo, place the mayo, lime zest, and juice in a bowl and stir to combine. Season to taste with sea salt.
To assemble: mayo, poached chicken, shredded lettuce, cucumber, and coriander, bread.
