Ingredients

  • 32 oz. milk
  • 8 oz. sugar
  • ¼ tsp. salt
  • 8 yolks
  • 3 oz. cornstarch
  • ½ oz. cake flour
  • 3 oz. soft butter
  • 2 tsp. vanilla

Step 1

In a pot boil 24 oz. mil, and ½ the sugar. Don’t mix.

Blend the remaining 8 oz. milk with the cornstarch and flour and whisk until the mixture is lump free. Add the egg yolks and remaining sugar. Slowly add the hot milk and pour the mix back into the pot and cook on medium high heat, whisking constantly. Remove the mixture form heat and strain. Cook the mixture to 110 degrees and add butter and extract. Stir, cover, and chill.
