Ingredients

  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 1 jar pasta sauce
  • 1 small can diced tomatoes
  • 1 medium zucchini, diced
  • 1 medium yellow squash, diced
  • 1 tablespoon garlic, minced
  • 2 small cans mushrooms
  • 2 cups shredded cheese
  • 1 pound box tri-colored rotini
  • salt
  • pepper
  • Italian seasoning

Preparation

Step 1

Boil rotini to al dente.

Brown turkey, adding Italian seasoning, salt and pepper to taste.

In a large pan, heat olive oil over medium heat. Add garlic, zucchini, yellow squash and mushrooms. Cook until tender. Add spaghetti sauce, diced tomatoes and cooked ground turkey. Season to taste. Cover and bring to a boil, then reduce heat and simmer for 10 minutes.

Heat oven to 350 and spray 9 x 13 pan. Ladle 1/3 of the sauce into bottom of pan. Layer half of rotini followed by half the cheese, Ladle another 1/3 of the sauce, the other half of rotini, followed by the rest of the sauce. Put the other half of cheese on top. Place in oven for 20 minutes.

Finish under the broiler if you like the cheese to brown.
