Apricot-Glazed Salmon

Salmon pairs beautifully with sweet glazes, and this easy balsamic and apricot reduction is no exception.

Ingredients
- 1/3 cup Apricot jam
- 1 Tbsp Balsamic vinegar
- 1 Garlic clove, minced (or1/4 tsp. powder)
- 1 tsp minced ginger (or 1/4 tsp powder)
- 1 lb Salmon fillets, skin and any small bones removed
- Salt
- Pepper

Preparation
Step 1
Preheat oven to 425'. Combine first 4 ingredients in small frying pan. Bring to a boil. Reduce heat to medium-low. Simmer, uncovered, for about 5 minutes, stirring occasionally, until slightly thickened. Remove from heat. Cool slightly.
Sprinkle salmon with salt and pepper. Arrange on greased baking sheet with sides. Transfer 2 Tbsp. jam mixture to small bowl. Brush over fillets. Cook in oven for 8 to 10 minutes or until fish flakes easily when tested with a fork. Brush with remaining jam mixture.
Safety tip: Be sure to sanitize your brush after coating the raw salmon fillets. A second amount of jam mixture will be added once the fillets are cooked, so it is important that bacteria from the raw salmon do not contaminate the cooked salmon.
