Pressure Cooker Brown Rice with Fresh Vegetables 1 Picture

Ingredients

  • 1/4 cup olive oil
  • 1/2 medium sized onion, diced
  • 2 large garlic cloves, crushed
  • 1/4 cup minced parsley
  • 1 large carrot, cut into bite sized pieces
  • 1 1/2 cup long-grain brown rice
  • 1 tsp. salt
  • 1/4 tsp. white pepper
  • 1 tsp. dried thyme
  • 1 bay leaf
  • 3 1/2 cups chicken broth
  • 2 Tbs. lemon juice
  • 1/2 lb. broccoli, stemes peeled and trimmed, bite size pieces

Preparation

Step 1

In a pressure cooker, heat oil. Add onion, garlic, parsley, and carrot and saute for 3 minutes. Add rice, salt, pepper, thyme, and bay leaf. Stir and cook 1 minute. Add broth and lemon juice. Secure lid. Over high heat, develope steam to high pressure. Insert a diffuser between pan and heat. Reduce heat to maintain pressure and cook 15 minutes. Release pressure and remove lid.

Add broccoli to rice mixture. Secure lid. Over high heat bring steam up to high pressure. Insert heat diffuser between pan and heat. Reduce heat to maintain pressure and cook 1 minute. Release pressure and remove lid.

Discard bay leaf and toss mixture. Serve.
