Ingredients
- 1 1/2 tsp active dry yeast
- 3/4 c warm water
- 2 1/4 c unbleached all purpose flour
- 1 tsp salt
- 1 tbsp olive oil
- pinch of sugar

Preparation
Step 1
place yeast in small bowl. add 1/4 c warm water and stir to dissolve.set aside for 5 to 10 minutes
combine flour, salt and sugar in bowl. stir in yeast mixture, olive oil and remaining 1/2 c water as necessary to make the dough hold together.
turn dough out onto lightly floured surface and knead until smooth and elastic, about 3 minutes. transfer to large oiled bowl. spread small amount of oil on top of dough, cover with plastic wrap, and set aside in a warm place to rise until doubled in bulk, about 1 hour.
can store in refrigerator for 8 hours or freezer for 3 to 4 weeks. make sure it is tightly wrapped in plastic
