Ingredients

  • 2 Cups Dark Brown Sugar (Firmly Packed)
  • 4 Eggs
  • 2 cups All Purpose Flour
  • 2 tsp. Baking Soda
  • 3/4 tsp. Salt
  • 2 tsp. Cinnamon
  • 1 1/2 cups Salad Oil
  • 1 cup Chopped Walnuts
  • 2 cups Carrots, Coarsely Grated

Preparation

Step 1

Preheat oven to 350 degrees.

Add sugar to eggs, one at a time. Mix well, then combine flour, soda, salt, and cinammon in a separate bowl. Add flour mixture and oil to egg mixture, beginning and ending with flour. Fold in nuts and carrots.

Pour into greased and floured 9 inch layer cake pans. Bake for 30 - 40 minutes. Cool 10 minutes in pan, turn onto cooling racks and cool thoroughly. Frost.
